Many of my friends have heard me say that I can’t wait to go to bed so I can wake up and have my morning coffee. That’s how much I love my morning coffee!

I didn’t always feel this way about coffee.  I wasn’t a regular coffee drinker, and when I did I have it, I usually drank only decaffeinated because caffeine made me jittery. I still can’t tolerate much caffeine, which is one reason why I really treasure my one cup of coffee in the morning. 

What makes my coffee so special? 

It’s not ordinary coffee … it’s Bulletproof!

Bulletproof Coffee is a brand developed by Dave Asprey, who was inspired by yak butter tea he was introduced to while traveling in Tibet. Yak butter tea is a morning staple in Tibet. It consists of tea, salt, and yak butter mixed together to make a hot fortifying drink.  Bulletproof coffee doesn’t have yak butter or salt in it, but it is a lovely, satisfying, hot mug of goodness. 

What goes in the Bulletproof coffee?  Well … Bulletproof coffee!  Bulletproof coffee beans are certified mold-free.  Asprey had a host of poor health conditions brought on by mycotoxins from mold exposure.  He wanted to drink coffee, so he developed coffee that is free of mycotoxins.

Mycotoxins are toxic byproducts produced by mold and can be found in many foods, including crops like grains and coffee beans. This study showed that 45% of 40 different commercially available brewed coffees had traces of mycotoxins.  The levels found are considered to be ‘safe’, by government standards. However, if you are sensitive to molds, what level of mycotoxins is safe for you?  

If you have an autoimmune disease, you might want to consider reducing your exposure to mycotoxins, and choosing to drink mold-free coffee could be one way to do that. 

The healthy benefits of coffee have been found in numerous studies.  Coffee is loaded with polyphenols, and polyphenols have been shown to have the following benefits:

  • Reduced inflammation (the most important thing if you have an autoimmune disease) 

  • Improved brain function by increasing production of brain-derived neurotrophic factor (BDNF)

  • Protection from cellular damage from oxidation 

  • Improved gut health by supporting the growth of good gut bacteria

Polyphenols are more easily absorbed when consumed with … fat.  That’s another reason to eat fat, but make sure it is quality fat.   Quality fats include coconut oil, krill oil, fish oil, avocado oil, grass-fed butter, and ghee.  And yak butter, if you can find it. 

Back to Dave Asprey’s Bulletproof Coffee.  It begins with the Bulletproof, mold-free coffee beans.  To make the polyphenols more readily absorbed in the body, fats are added.  

The official recipe is:


  • 2 1/2 heaping tbsp freshly ground Bulletproof coffee (or another mold-free coffee)

  • 1 cup filtered, boiled water

  • 1 tsp Bulletproof Brain Octane Oil or MCT oil

  • 1-2 tbsp grass-fed unsalted butter or ghee


Brew coffee with water.  Transfer coffee to a blender.  Add Brain Octane Oil and butter or ghee.  Blend for about 20 seconds. 

The result: delicious, frothy goodness with ketones and polyphenols to carry you through your morning!


An added benefit of this coffee is that the presence of fats in the form of MCT (Medium chain triglycerides) and butter can help create a state of ketosis if no carbohydrates are consumed.  This makes it perfect for a fasting or ketosis diet because the fats provide energy, help you think clearer, and satiate you between meals.  Read here about intermittent fasting. 

This style of coffee has become popular with the Keto diet.  Some coffee bars even offer “keto coffee” on their menus.  

I love starting the day with my Bulletproof coffee.  Yes, it is a little more expensive than a regular cup of coffee made at home, but about the same as buying a latte.  Yes, it takes more time to make, and the blender has to be washed, but I decided I am worth it!
